Cold Pressed Oil vs Refined Oil vs Filtered oil

In India, we traditionally use Groundnut oil, Coconut oil, Sesame oil and Mustard oil for our cooking. We prefer these oils based on its nutrient values, taste and flavour. Our market filled with so many varieties of oils recently. Based on the extraction method we could categorise them as, Refined oils, Filtered oil (Double/Single) and Cold Pressed/Wood pressed oil In this article, we would like to analyse the process of making these oils.

Cold pressed Oil

It is also called as Wood pressed oil. It is the method of oil extraction from the seeds without any heating process. For pressing, we can use either steel presser or wooden presser(traditionally made with a special wood called Vaagai/Siris tree). The process involves pressing the seeds or fruit in the mill till the oil comes out completely. But output will be lesser compared to other extraction methods. As an average, 2.4kg seed gives 1lt of oil.(That is why it costs more) For sesame oil, Jaggery or Palm Jaggery will be used as non-cakening agent to make it more flexibile in the extraction process and add its own natural flavour and nutrients and also acting as taste enhancer and natural preservative. Cold pressed Oils made using palm Jaggery is considered as premium quality due to its more health benefits. As the seeds do not undergo any heating & chemical process, it retains its health benefits.

Refined oil

It is popularly used by many house hold due to its low cost. The process of extracting the refined oil involves various steps as follows. Degumming Process of removal of its natural dark colour and flavour. Neutralization: It neutralizes free fatty acids in the oil using caustic soda and potash, also decomposes pigments, it eliminates phosphorus compounds, trace metals, proteins and oxidizing materials Bleaching: Process of Removal of colouring pigments and related compounds that catalyze the oxidation of the oil by reacting with light. Dewaxing (Winterisation): The temperature of the heated oil is then brought it to 6-8 degrees to remove wax and saturated triglycerides particles.   Deodorization: This step used to remove the offflavors generated during the previous refining steps. During deodorization oil is subjected to high temperatures, to a stripping stream and pressure for a given duration aimed to the optimization of the elimination of undesirable substances, but preserving minor components (leaving at least 80% of them) and reducing the creation of trans-fatty acids or oxidation products. The Refined oil making process involves 3 major processes. They are Extraction, Refining & Modification. During Extraction, the seeds are heated up to 200 degree Celsius and then extracted under the high pressure to get maximum output up to its 70-80% oil content. In this temperature and pressure, oil looses all its natural nutrients. During Refining, the extracted oil undergoes very high temperature and then reduced to the lowest temperature up to 6-8 degree Celsius. And then every time, few chemicals are added or removed to improve the flavour and colour and to improve the shelf life. During modification process, some vitamins and minerals, preservatives are added.

Filtered oils

In recent days, Filtered oils are also available in the Indian market. Many of us misunderstood that, filtered oils are nothing but Cold pressed oils. They are not cold pressed oils. Filtered oils are less processed and treated with chemicals than refined oils. But involves advanced way of removing the residues and other particles. They are added with few other ingredients to improve the colour and odour and to enhance the flavour.
